COCONUT CURRY SHRIMP
Was super strapped for time today after my workout and had a bunch of work to do. Was arguing in my head that it would be so much easier to just stop for take out! Quick sushi fix; a shwarma; anything that didn't require work. But, I quickly reframed my head and drove home. Knowing I had left over quinoa in the fridge, frozen shrimp and some head lettuce, I made this! Easy and wow!! Delish!
12 frozen shrimp
tbsp coconut oil
1/2 cup cooked quinoa
handful of cilantro
1/4 inch shredded ginger
two splashes of whole milk
2 tbsp curry powder
a little freshly squished lime juice!
Just put them all together and served in lettuce wrappers.
